Ok it’s hot….very hot….and what do you want at the end of the day? Something cool and refreshing (and nourishing!). Look no further than a bowl (or two) of Chilled Spanish Gazpacho.
It’s really easy to make – it’s raw – it’s cool – it’s just the job! And don’t forget you can make it all organic by buying your ingredients from Rice Up 🙂
Ingredients (serves 4):
4 inch piece of peeled and chopped cucumber
2 spring onions – peeled and chopped
1/2 a large sweet red pepper – deseeded and chopped
1 clove garlic – chopped
3tbsp olive oil
1tbsp white wine vinegar
1 heaped tsp of freshly chopped basil
1/4 pint cold water
Salt and black pepper to taste
Dead easy – basically blend it all together. If you have a powerful blender (Vita Mix etc) you can just chuck everything in and whizz it for 1 minute. If you don’t then it’s best to skin the tomatoes (plunge into boiling water for a couple of minutes then remove the skins) When it’s smooth pour it into a bowl and chill in the fridge for an hour or so. Serve with a garnish of chopped pepper, cucumber and parsley.. Mmmmmmmm!
You can drop an ice cube in each bowl to get extra chilliness…..
