Mini Figgy Puddings
These festive raw sweets are packed with goodness, contain no processed sugar and taste divine! They are very popular with adults and children alike….. You can vary the ingredients to suit your taste – just follow the basic principle of 1 quantity of nuts to 2 quantities of fruit.
1 cup walnuts
1 cup dried figs
1 cup raisins
1-2 tbsp water or fresh juice or alcohol
Ground almonds or desiccated coconut to coat
Grind the nuts in a food processor or blender until well powdered. Chop the fruit and add to the nuts and process until the mixture binds together (adding the liquid as necessary) – don’t be tempted to add too much liquid or the mixture will be too sticky. Take walnut sized pieces of the mix and roll into balls by hand then coat with the almonds or coconut.
Makes around 20-25). Store in the fridge if they last that long!
