Cashew Truffles

Chocolate Cashew Truffles

Makes around 18 truffles

Ingredients:

1 cup raw cashews (approx 125g)

1 cup dates (approx 150g)

¼ cup raw chocolate powder (approx 40g)

1/8 cup water (2-3 tbsp)

Optional coatings: Choc Powder, Chocolate Nibs, Desiccated Coconut, Chopped Nuts….

 

Method:

In a blender, grinder or food processor whiz the cashews into a powder (NB don’t whiz for too long or you’ll end up with a paste rather than a powder).

Put them in a bowl with the choc powder and mix.

Chop the dates into small pieces and add water.  Whiz these until a nice mushy consistency (not too wet or your truffles won’t hold together).

Mix all ingredients together until you have a stiff, consistent mixture then take walnut sized pieces and roll them into balls using your hands.  Finally roll in whatever coating you choose.  Ready to eat straight away!
